It is this lake that this coffee is named after. 11 producers from 12 different farms contribute to this lot. The small producers contributing to Apans use micro‐mills on their respective farms to process their coffee. Then they transport their wet parchment to Beneficio La Estrella for drying on shaded, raised beds. The facilities and processing expertise offered at Beneficio La Estrella are valuable to these small farm producers as they result in higher quality coffee, better coffee prices and greater connection to buyers.
