Old Man Saltbush is a fast-growing, edible shrub native to most arid parts of Australia. Traditionally used as a food source by the Indigenous Australians, the seeds and leaves of Saltbush are collected and ground for use in damper and to flavour foods. The leaves are also commonly eaten fresh or added to meat while it cooks. Salty in flavour and rich in protein, antioxidants and minerals, Old Man Saltbush is ideal as a herb or sprinkle or as a direct substitute for salt. Drought and flood resistant, the hardy plant has also been identified by the United Nations Carbon Emission Trading Scheme to assist with the reduction of greenhouse warming.
